  • వంకాయలు Brinjal (Small and tender) 500g
  • నూనె Oil 3 tbsp
  • ఆవాలు Mustard seeds 1 tsp
  • జీలకర్ర Cumin seeds 1 tsp
  • మినపప్పు Split black gram (Urad dal) 1 tsp
  • శనగపప్పు Bengal gram (Chana dal) 1 tsp
  • కరివేపాకు Curry leaves 2 రెమ్మలు
  • పసుపు Turmeric powder 1/2 tsp
  • కారం Red chili powder 2 tsp
  • ఉప్పు Salt (Adjust to taste) 1 tsp
  • వేరుశనగ పప్పుల పొడి Roasted Peanut powder 2 tbsp
  • ధనియాల పొడి Coriander powder 1 tsp
తయారి విధానం
  1. వంకాయలను శుభ్రంగా కడిగి చిన్న ముక్కలుగా కోసి ఉప్పు నీటిలో వేయాలి.
    Wash the brinjals thoroughly and cut them into small cubes or thin slices. Soak them in salted water to prevent darkening.
  2. బాణలిలో నూనె వేసి వేడయ్యాక ఆవాలు, జీలకర్ర, మినపప్పు, శనగపప్పు వేసి వేయించాలి.
    Heat oil in a heavy-bottomed pan and add mustard seeds, cumin seeds, urad dal, and chana dal.
  3. కరివేపాకు, పసుపు వేసి చిటపటలాడనివ్వాలి.
    Once the lentils turn golden, add curry leaves and turmeric powder.
  4. ఇప్పుడు వంకాయ ముక్కలు, ఉప్పు వేసి బాగా కలపాలి.
    Drain the brinjals and add them to the pan along with salt. Mix well.
  5. మూత పెట్టి మధ్యస్థ మంట మీద వంకాయలు మెత్తబడే వరకు మగ్గించాలి.
    Cover with a lid and cook on medium flame until the brinjal pieces become soft.
  6. మూత తీసి 5 నిమిషాల పాటు హై ఫ్లేమ్ మీద వేయించాలి ముక్కలు కరకరలాడే వరకు.
    Remove the lid and fry on high flame for 5 minutes, stirring occasionally to get a crispy texture.
  7. ఇప్పుడు కారం, ధనియాల పొడి, వేరుశనగ పప్పుల పొడి వేయాలి.
    Add red chili powder, coriander powder, and roasted peanut powder.
  8. అన్నింటినీ బాగా కలిపి మరో 2 నిమిషాలు వేయించి స్టవ్ ఆపాలి.
    Mix gently to coat the pieces and cook for another 2 minutes until aromatic.
  9. వేడి వేడి అన్నంతో లేదా పప్పుచారుతో వడ్డించండి.
